Swiss chard

Ingredients

2 bunches of swiss chard (mix the varieties: red, green or orange)
60 ml (1/4 cup) extra virgin olive oil
Juice of 1 lemon
Fleur de sel

Steps

— Bring a large pot of salted water to boil and cook the swiss chard for 5 to 8 minutes. The stem should break when you press it lightly with your fingers.

— Remove the chard from the water and spread it on a baking sheet. Drizzle with oil; add lemon juice and sprinkle with fleur de sel.


FINALE — Serve the chard in a nice bowl with some of its cooking juice. A must with fish and grilled meats.


NOTE — Little known, the swisschard gains in popularity due to its flavor and properties. For a change, replace it with dandelions or escarole.
